Here’s how I make Scotch Eggs:

Boiled eggs

  1. Boil water in a pot.
  2. Cook the eggs for up to twelve minutes.
  3. Then, transfer the eggs to an ice bath.
  4. Peel the eggs.
  5. Set them aside.

Meat coating

  1. Mash the sausages in a bowl.
  2. Then, season with mixed herbs, garlic powder, nutmeg, all-purpose seasoning, turmeric, cayenne pepper, and spring onion.
  3. Mix everything with a spatula.

Wrap the eggs

  1. Place the chicken sausage mixture on a flat surface with cling film.
  2. Fold the cling film to flatten the mixture. 
  3. Place an egg in the middle.
  4. Gently wrap the sausage mixture around the egg.
  5. Mold it with your hands to coat it fully.
  6. Then, remove the cling film. 
  7. Prepare a whisked egg, bread crumbs, and flour in separate bowls.
  8. Coat the egg in flour, dip it in the whisked egg, and dip it in bread crumbs. 

Deep fry!

  1. Deep fry the eggs in a deep frying pan over medium heat.
  2. Cook the eggs for about five to six minutes or until golden brown.
  3. Then, toss the eggs in the oil.
  4. Once cooked, transfer to a lined plate and serve!

Oven
  • Bake the eggs in a preheated oven for 30 minutes.
  • It is also suggested to use cupcake trays and a temperature of 160°C.
Instant Pot
  1. Put a cooling rack in the instant pot.

  3. Pour water and let it boil for seven minutes.
  4. Set the instant pot to high pressure. 
Air Fryer
  1. Cook the eggs in a preheated air fryer for 12 minutes.
  2. Then, set the air fryer to 135°C.
  3. Once cooked, remove the eggs from the air fryer to serve.

    Remove the casing of the sausages. Season it with mixed herbs, garlic powder, nutmeg, all-purpose seasoning, turmeric, cayenne pepper, and chopped spring onion.
  • Wrap the eggs.
    Boil eggs depending on the doneness you prefer. Roll them on a napkin to dry. Place chicken sausage mixture on a flat surface with cling film. Fold the cling film and flatten the mixture.
  • Place an egg in the middle and gently wrap the chicken sausage mixture around the egg. Ensure that the whole egg is covered. Mold it with your hands. Remove the cling film.
  • Coat the eggs.
