How to Make Nigerian Egg Rolls
Despite the fantastic flavor and texture of Nigerian Egg Rolls, it’s quite simple to make. As long as you know how to boil eggs, make dough, and deep fry, you’ll cook the perfect egg rolls with the coconut twist.
Trust me, the Coconut Nigerian Egg Rolls are just as easy as the classic ones!
Ingredients
What do you need to make Nigerian Egg Rolls in coconut flavor?
Eggs
I’ve tried countless egg recipes before, but the Nigerian Egg Rolls are some of my go-to recipes.
In this dish, you will need boiled eggs that you can wrap in dough. The egg whites will have a soft and chewy texture, while the yolks will be tender and creamy in the middle.
Be sure to use hard-boiled eggs to hold the structure of the egg rolls properly. It will also be easier for you to deep-fry it while keeping the rolls intact. Most importantly, eggs are good for your health.
According to an article in A Sweet Pea Chef, one large egg contains only 80 calories! Boiled eggs are rich and savory, but they are also packed with health benefits.
If you love egg recipes like me, then you can also try Scotch Eggs, Fried Eggs, or an Egg Mayo Sandwich. Once you learn how to boil eggs perfectly, the Nigerian Egg Roll recipe will be a piece of cake!
Coconut milk
What better way to give the egg rolls that coconut flavor than with some coconut milk? It has a sweet and nutty flavor with a thick and creamy consistency – perfect for lots of recipes.
I suggest mixing the coconut milk into the dough for an evenly distributed flavor. This milk will also give the dish a fragrant aroma that will make you feel like you’re on vacation.
Medical News Today found that coconut milk can be good for weight loss, heart health, and immunity. You can also use your leftover coconut milk for Coconut Chin Chin, Coconut Rice, or Coconut Puff Puff!
Plain flour
I won’t be a Nigerian Egg Rolls recipe without plain flour for the dough. The gluten from the flour will make it easy for you to knead, shape, and wrap the dough. It will give the egg rolls the form that they need.
The flour will also give the egg rolls a flaky, crisp, golden brown crust on the outside yet soft on the inside. You can also use the flour for Crispy Fried Fish, Chicken Pizza, and Chin Chin!
Baking powder
Adding baking powder gives the dough more rise and volume. It leavens and expands the flour to fully coat the boiled eggs. Once you deep fry it, you’ll see the extra puff it gives.
Your Nigerian Egg Roll will surely have that extra puff for the most appetizing appearance. I also suggest using baking powder for other deep-fried snacks like Coconut Buns!
Salted butter
Using salted butter will work like magic in this recipe. It gives the pastry a light and friable quality, and the butter also binds the dough ingredients together to achieve a smooth and perfect texture.
Butter also adds a fragrant aroma, especially once you slice the egg rolls. In fact, butter can help with the inviting color of the dish. Be sure not to skip the salted butter for the best flavors.
Seasoning
In this recipe, I suggest using sea salt, nutmeg, and milk powder as the seasoning. These will balance the overall flavors of the dough and eggs for the perfect taste at every bite.
Sunflower oil
Whenever you’re deep frying, use oil with a high smoke point to cook the food properly. Since egg rolls can take a while to cook, use any kind of oil that’s heat resistant.
Can you smell and taste the Nigerian Egg Rolls already? This recipe is a new take on how you cook eggs and how you can bring Nigerian cuisine into your home!

Tips
How to Store Pastry Ingredients
Dry pastry ingredients should be stored in their original packaging or containers in cool, dry, and dark areas. They don’t need to be stored in the fridge or freezer.
Coconuts
Buying coconuts
- Shake the coconut and if you feel that there’s lots of water inside, go for it!
- Check if the soft eye is free from molds.
- Oh, The Things We’ll Make suggests buying coconuts that feel heavy for their size.
Storing coconuts
- Whole fresh coconuts can last up to four months at room temperature.
- On the other hand, grated coconut meat is best refrigerated in a container or resealable bag to last up to four days or frozen to last up to six months.
- Meanwhile, coconut milk can be kept in the fridge for four days.
- You can also freeze coconut milk in ice cube trays and transfer them to freezer bags for easy access.
Preparing coconuts
- Locate the soft eye of the coconut by poking with a knife.
- Poke the soft eye and flip the coconut over a glass or bowl to get the coconut water out.
- Then, set the coconut water aside.
- Use a hammer or knife and lightly pound on the coconut while turning it over.
- Remove the skin with a peeler for the coconut meat until you are left with the white part.
- Grate the coconut meat with a grater and store it in a container.
Dough
- Buy quality pastry ingredients and store them properly.
- Always start with your dry ingredients before adding the dry ones.
- You can knead using a mixer with a kneading attachment or using your hands.
- Remember to lightly flour the clean surface so you can mold the dough properly.
- Before wrapping the egg in the dough, check if it is elastic enough to secure the egg inside.
- Apply slight pressure on the dough, and if it bounces back immediately, it is ready to use.
- You can also stretch out a small amount of dough; if it breaks apart, it needs more kneading.
Nigerian Egg Rolls Variations
There’s always more than one way to make Nigerian Egg Rolls.
Note that this recipe is not vegan or gluten-free dish because of the eggs and the dough. Feel free to substitute ingredients with condiments that are best suited to your diet.
Instead of plain flour and baking powder, you can use self-raising flour for a two-in-one flour. I also suggest trying plant-based flour such as almond flour or oat flour.
Instead of making coconut milk at home, you can also use one from the grocery store. You can also use unsalted butter as an alternative to salted butter. Aside from eggs, it’s also good to use quail eggs, especially for kids.
