Ingredients

Chicken drumstick

One of the best things with chicken and pasta is they are so easy to prep and surprisingly, they are extremely delicious. It has a unique flavor paired with its juices and texture.

My family also loves other dishes like Crispy Chicken Wings, Gizzard Stew, and Roast Chicken!

Spaghetti pasta
dry spaghetti

Spaghetti pasta is a popular Italian dish you can use for many dishes. It is also cheap and easy to prepare. Moreover, it can be paired with different sauces and garnish!

It’s my go-to pasta for Spaghetti Bolognese and One-Pot Spaghetti Pasta!

Coconut milk

Coconut milk helps with a creamy and real curry quality. Furthermore, it has a nutty yet mildly sweet flavor that blends well with the spices.

I also use coconut products for desiccated coconuts, Nigerian Egg Rolls, and Coconut Chin Chin!

Onion and garlic

Onion and garlic will help improve the taste of the chicken. These also make the dish smell better!

Oat flour

Oat flour is optional if you want to thicken the curry sauce. You can use alternatives such as buckwheat or sourgum flour.

Coconut oil

Coconut oil is used to saute the ingredients. It can instantly upgrade the dish’s nutty taste. It is also a healthy oil for stir-fry recipes!

Seasoning

Seasoning depends on you. But I suggest using mixed herbs, white pepper, cumin, cumin powder, curry powder, ginger powder, all-purpose seasoning, stock cube, garam masala, coriander, and sea salt.

Once you get all these ready, the cooking process will be a piece of cake! Put your apron on, and let’s make this yummy Curry Chicken Pasta!

Tips

How to Buy and Store Chicken

Selection. Ensure the flesh is pinkish without bruises. It should not have a foul smell. Additionally, buy it from your local butcher or in a grocery store. You can also use chicken breast strips or other boneless parts.

Storage. An article by Taste of Home mentioned that chicken is best stored immediately. Keep it in its original bag or a resealable bag. Refrigerate at the bottom part of your fridge.

Use refrigerated ones within two days. For longer shelf life, freeze it for several weeks.

How to Make Mixed Herbs

Mixed herbs are useful spices that you can use for rubs, sauces, and more! Combine basil, parsley, marjoram, oregano, sage, tarragon, and thyme to make this seasoning.

Store this in an airtight jar to last up to a long time! You can use this for dishes such as Jollof Rice, Grilled Salmon, and Roast Chicken. Even this recipe’s spaghetti will taste better with mixed herbs!

How to Make Oat Flour

Making homemade oat flour is easy.

  1. Blend rolled oats using a blender, food processor, or miller.
  2. Filter it using a fine mesh sieve for a finer texture.

Oat flour can be used for pastry, dishes, and even drinks. It is also cheaper than oat flour! Store this in an airtight container for several months.

Give your Chicken Curry Spaghetti a thicker sauce with oat flour!

Homemade Coconut Milk

Coconut milk is very easy to make at home. It’s one of the best ingredients to add to curry!

  1. Open the coconut and transfer the coconut water into a container.
  2. Then, scrape off the coconut meat and slice it into small pieces with a knife.
  3. Blend the coconut meat, coconut juice, and water until creamy.
  4. Filter the contents using a sieve or a nutmilk bag
  5. Thereafter, store coconut milk in an airtight container.
  6. Refrigerate it for up to three days or freeze it for up to 1 month.

Curry Chicken Pasta Variations

Use spaghetti alternatives like penne, ravioli, and more! Moreover, cook your pasta according to the instructions. Prepare the curry as mentioned in this recipe for new dishes!

You can also make a vegetarian version of this recipe. Replace the chicken with peas, potatoes, mushrooms, or even bell peppers. Use cream, milk, or other sauce thickeners for the curry’s consistency.

Coconut milk can be homemade or store-bought (in milk or powder form). MJ and Hungryman also recommend adding broccoli and pumpkin to the dish. Although coconut milk is suggested, you may also opt for tomato puree instead.
