  5. In a pot, combine the chicken gizzard with the chopped garlic, onion, ginger, mixed herbs, sea salt, curry powder, and chicken stock.
  6. Cook for 25 minutes over medium heat. 
  7. Drain the liquid stock and take out the gizzard. Store the liquid stock for later use. 
  8. Fry the remaining gizzard in sunflower oil over medium heat for 10 minutes or until done.
  9. In the same pot, saute the diced onion and garlic for 2 minutes.
  10. Season with salt, mixed herbs, and chicken stock.
  11. Add in the chopped yellow peppers and scotch bonnet. 
  12. Cook for 30 minutes over medium-low heat. Mix at regular intervals.
  13. Then, add in the fried gizzard and onion. Finally, let it simmer for 5 minutes before serving!

Ingredients
 
 

For the gizzard

  • 1 kg chicken gizzards
  • 3 garlic cloves (chopped)
  • 1 onion (diced)
  • ginger (thumb-sized; optional)
  • ½ tsp mixed herbs
  • ½ tsp sea salt
  • ½ tsp curry powder
  • 2 stock cubes (chicken flavor)

For frying

  • cup sunflower oil
  • cooked chicken gizzard

For the sauce

  • fried chicken gizzard (see cooking and frying)
  • ½ onion (medium-sized )
  • 3 garlic cloves
  • tsp sea salt
  • 1 tsp mixed herbs
  • 3 chicken stock cubes
  • 13 yellow bell peppers (medium-sized)
  • 5 scotch bonnet (use less or more if preferred)
  • Gizzard-infused oil (the oil used to fry gizzards)
  • ½ medium-sized onion (for garnishing)

Instructions
 

  • Prepare the yellow bell peppers.
    First, rinse and slice the bell peppers into small pieces. Use a blender to pulse a few times until chopped. You can also manually dice them. Next, pour the contents into a colander and press out the juices to drain.
    Repeat the same process for all of the chopped bell peppers. Set it aside. Store the excess yellow bell pepper juice in a container to use for cooking or drinking.
  • Prepare the other ingredients.
    Then, dice the onions. Finely chop the garlic. Scrape and chop the garlic. Carefully mince the scotch bonnet.
  • Cook half of the chicken gizzard.
    In a pot, combine the chicken gizzard with the chopped garlic, onion, ginger, mixed herbs, sea salt, curry powder, chicken stock. Cook for 25 minutes over medium heat.
    Make sure to heat occasionally. Drain the liquid stock and take out the gizzard. Store the liquid stock for later use.
  • Fry the remaining chicken gizzard.
    Pour sunflower oil into a wok and preheat over medium heat. Fry the remaining gizzard in two batches. Let each batch cook for 10 minutes or until done.
  • Cook the stew.
    In the same wok, sautee the diced onion and garlic. Leave to fry for 2 minutes. Season with salt, mixed herbs, and chicken stock. Add in the chopped yellow peppers and scotch bonnet.
    Cook for 30 minutes over medium-low heat. Mix at regular intervals. Then, add in the fried gizzard and onion. Finally, let it simmer for 5 minutes.
