I suggest cooking boneless and skinless parts like thighs, breasts, or drumsticks. In this recipe, I used drumsticks because they’re affordable and quick to cook.

Coconut milk 

One of the secrets to good Chicken Curry is the coconut milk. It’s a good plant-based milk that you can use for your recipes. The milk adds a rich, creamy, and thick quality to the curry.

Coconut milk also adds a sweet and nutty flavor to the dish. You can buy this in the grocery or make your own at home! I occasionally use this for Nigerian Eggs Rolls, and it always gives the best results.

Onion and garlic

  5. Saute the onions and garlic in coconut oil in a frying pan for two minutes.
  6. Stir the chicken for five minutes with a spatula.
  7. Then, season with curry powder.
  8. Pour in the coconut milk and let it simmer for about five minutes.
  9. Add the oat flour or any other thickener of your choice.
  10. Cook it for two more minutes. 
  11. Serve the dish in glass bowls for everyone to enjoy!
