Self-raising flour
If you want to make the chicken extra crispy and crunchy, then use self-raising flour. It has the leavening potential of baking powder for extra crispiness.

Tips
These helpful tips will take your Spicy, Crispy Fried Chicken Wings to the next level!
Buying, storing, and preparing chicken wings
Selection. You can buy whole chicken wings or precut versions as long as the chicken wings are fresh and plump. They should be without discoloration or bruises. The odor should also be neutral.
Storage. According to Pantry and Larder, raw chicken should not be left at room temperature for longer than two hours. Do not wash it and wrap it in cling film before placing it in an airtight container to refrigerate or freeze.
Use refrigerated chicken within 2 days, while frozen chicken can last up to several weeks or months.
Preparation. Do not wash the chicken wings to extend their shelf life. Then, locate the joint between the drama and the wing yet to separate the two. You can also include the tip of the wing if you want.
Homemade mixed herbs
Prepare homemade mixed herbs by combining basil, parsley, marjoram, oregano, sage, tarragon, and thyme. You can check out my mixed herbs recipe for more information and tips.
Use mixed herbs for different recipes, such as Jollof Rice, Spaghetti, and Scotch Eggs.
Making self-raising flour
If you don’t have self-raising flour in stock, then you can make your own using three cups of plain flour and six teaspoons of baking powder, and sieve them with a fine mesh sieve.
Break down the particles for a finer texture. And just like that, you can use this for the chicken wings and other dishes such as Puff Puff and Vanilla Cake!
KFC Hot Chicken Wings Variations
What you’ll love about these chicken wings is that you can easily customize the flavor. Moreover, you can use herbs and spices of your choice. Use more or less red chili sauce to set the level of spiciness.
You can choose to season the flour and the eggs with the condiments. The ingredients can also be used for chicken parts like chicken breasts, drumsticks, and legs. Also, while double dredging is suggested for extra crispiness, you can do it just once.
