  1. Use a blender to pulse the tomatoes, red bell pepper, sweet pepper, scotch bonnet, and red onion.
  1. Saute the red onion and chicken breast in coconut oil in a non-stick pan over medium heat.
  2. Season it with your preferred herbs and spices, but I recommend using salt, mixed herbs, parsley, basil, garlic powder, ginger powder, curry powder, and chicken stock cubes. 
  3. Let it cook for 5 minutes with occasional stirring with a spatula.
  4. Then, add the blended sauce and mix them.
  5. Cover it with a lid and let it cook for another 10 minutes.
  6. Taste the sauce and season as needed. 
  7. Spread the spaghetti noodles on top and submerge them in the sauce. Reduce the heat and cook for about 5 minutes.
  8. Add chopped spinach or other toppings of your choice. 
  9. Simmer for another 5 minutes or until you achieve your preferred texture. 
  10. Once content with the flavor, transfer the dish to a plate to serve and enjoy!

Storage. Unopened chicken packages can be refrigerated for up to 3 days, but these are best frozen for up to several weeks or even months.
