Ingredients

For the chicken wings marinade

For the seasoned flour

For the wet batter

  • 2 eggs
  • red hot chili sauce

For deep frying

  • Marinated and dredged chicken wings
  • Vegetable oil (enough to deep fry)

Instructions

Prepare the chicken.

  • Divide the chicken wing by the joint on a chopping board using a knife.
  • You can choose to remove the tip.

Make the seasoning rub.

  • In a small glass bowl, combine the curry powder, mixed herbs, garlic powder, ginger powder, oregano, white pepper, red chili powder, paprika, turmeric, all-purpose seasoning, and sea salt.
  • Prepare another batch of this mix for the deep fry flour.

Marinate the chicken.

  • Put the chicken in a glass bowl. Add hot chili pepper to the chicken and incorporate the seasoning.
  • Coat the chicken in the rub properly.
  • Cover it with cling film and refrigerate for at least two hours or overnight.

Prepare the flour mixture.

  • In a bowl, combine self-raising flour.
  • Rub the same seasoning rub mentioned in the second step.

Mix the wet batter.

  • Add hot chili sauce to eggs, depending on how spicy you want it to be.
  • Whisk them together and set them aside.

Coat the chicken.

  • Toss the chicken in the seasoned flour with tongs or your hands.
  • Ensure the chicken is well coated. Shake off the excess flour.
  • Dredge the chicken in the wet batter.
  • Coat it with the seasoned flour again.
  • Alternatively, put the chicken in the seasoned flour bowl and shake the container.

Deep fry.

  • Heat oil in a deep frying pan and lower the chicken into the oil.
  • Set the heat to medium heat.
  • Leave to deep fry for at least 10 minutes.
  • Turn the chicken wings regularly to allow them to cook on both sides.
  • Once fried, place the chicken wings on a lined plate using a skimmer spoon.
  • Let it cool at room temperature and give it a go!

Notes

  • Aside from chicken wings, you can use the marinade for chicken breasts, drumsticks, and thighs.
  • Instead of deep-frying, the chicken can also be air fried or baked.
  • Use self-raising flour and dredge the chicken wings twice to make them crispier.
