Jumbo oats

Jumbo oats are the main ingredients of granola bars because they provide structure, texture, and nutrients. They’re fiber-rich and gluten-free, making you feel full for a long time. 

These jumbo oats are my go-to oats because they have worked perfectly well for my Peanut Butter Granola Bars, Weight Loss Bars, and Granola!

Milk chocolate

Milk chocolate will give the dish the chocolatey sweetness for a more appetizing quality. It also contributes to chewiness, especially when it melts into the other ingredients.

Honey

Honey acts as a binder to achieve the bar form of the granola. Additionally, even a bit of this condiment can intensify the sweetness in this recipe.

Directions

  1. Add oats, sea salt, cinnamon, and nutmeg in a bowl.
  2. Then, add coconut oil, honey, and vanilla extract.
  3. Mix with a spatula until well combined.
  4. Preheat the oven to 150º C for 10 minutes.
  5. Line a baking tray with parchment paper and spread the oats evenly on the baking tray.
  6. Bake in the oven for 30 to 35 minutes.
  7. Mix and turn the granola halfway through the baking time.
  8. Set it aside to cool.
  9. In a large glass bowl, melt the milk chocolate.
  10. Incorporate the granola, raw cashew, and roasted peanut in melted chocolate, and mix until well coated.
  11. Add the granola mixture into the granola bar mold, and compress it with a spoon or a rolling pin.
  12. Place in the fridge for 30 minutes (or freezer for 5 minutes) or until set.
  13. Take the granola bars from the mold, put them in a resealable bag, and refrigerate.

Toasting Jumbo Oats

If you don’t have an oven, then you can pre-cook the jumbo oats on the stove.

  1. Heat a skillet over medium-high heat.
  2. Grease it with butter or a bit of oil if desired.
  3. Toss the jumbo oats and let them heat up for about 2 minutes.
  4. Then, mix until they turn golden brown.

How to Make Milk Chocolate

  1. Place a heat-resistant bowl over a pot of water.
  2. Melt half a cup of coconut butter or coconut oil over medium heat.
  3. Incorporate ⅓ cup of cocoa powder, three tablespoons of powdered milk, and ¾ cup of sugar until well combined. 
  4. Stir the mixture for 5 minutes before pouring it into the chocolate mold or ice cube tray.
  5. Let it sit at room temperature for 30 minutes before transferring it to the freezer.

Chocolate Granola Bar Variations

The great thing about making homemade granola bars is customizing them according to your liking. For instance, you can also try dark chocolate or white chocolate instead of milk chocolate. 

For the nuts, you can use pine nuts or almond nuts as well. In case of nut allergies, omit them from the recipe. To give it a filling quality, I recommend mixing in seeds such as chia seeds, sesame seeds, or pumpkin seeds. 

Granola bars are also prepared with fruit such as banana chips, dried goji berries, or fried plantains. In terms of sweetening agents, you can also use maple syrup, pitted dates, cashew butter, peanut butter, and more! 

Coconut oil can also be replaced with butter and alternative binding ingredients for more flavor. To intensify the nutty flavors, incorporate desiccated coconut as well.
