Plantains are sweet and starchy fruits that have a smooth texture when fried. These pair perfectly with meat and chicken. I always use my leftover plantains for porridge, fufu, or chips!
Bell peppers and sweet peppers
These peppers can surely add rich flavors and colors to the recipe. They even have a pleasant aroma to make them more appetizing. Use these for the sauce and the stick.
Aside from using them for this dish, these peppers are also perfect for Jollof Rice to pair with this recipe!

Tomato
Tomatoes add acidity, sweetness, and color to the dish. These can also balance the seasoning and the taste of the gizzards. I even make One-Pot Spaghetti as a side dish for these gizzard sticks!

Onions are great ingredients for chicken gizzards and sauce. You can also use these as raw ingredients on the dodo stick. Meanwhile, garlic is one of the herbs used to make chicken gizzards more flavorful, sweet, and spicy.
Seasoning
For the seasoning, I recommend using mixed herbs, garlic powder, turmeric, all-purpose seasoning, ginger powder, and curry powder. Trust me; you can never go wrong with these herbs and spices.

Tips
How to Select and Store the Ingredients
Chicken gizzards
Selection. You can readily buy chicken gizzards at your local butcher or supermarket. Also, remember to check the expiration date for freshness.
Storage. Refrigerate the gizzard in an airtight container or resealable bag but use them within two days. You can also freeze them to last up to several weeks.
Plantain
Selection. Choose fried plantains that are yellow and black. The darker the plantain is, then the sweeter it will be.
Storage. Plantains can be stored at room temperature for several days. Once ripe, transfer them to the fridge or freeze them for extended shelf life.
Bell peppers, sweet peppers, and scotch bonnet
Selection. Purchase bell peppers with shiny, smooth, and clear skin. The stem should still be attached, and peppers should feel heavy for their size.
Storage. Store the bell peppers in the crisper drawer of your fridge and use them within a week.
Tomato
Selection. Choose plump tomatoes with glossy skin. The stem should still be attached, and there should be no soft spots.
Storage. You can store these at room temperature. As they ripen, transfer them to the fridge to use within several days.
How to Make the Sauce Without a Blender
Alternatives to a blender include a grater, food processor, mortar and pestle, and other similar kitchen tools. You can finely chop the ingredients until you’re contented with a sauce-like or chunky consistency.
Dodo Gizzard Stick Meat Variations
For this recipe, you can use other meat substitutes for the gizzard. You may definitely opt for other parts of the chicken, beef, turkey, or even tofu for a healthier option.

Frequently Asked Questions
What kind of plantains should you use?
Ripe plantains are best for this recipe because the sweetness can balance the flavor of the gizzard and the seasoning. Unripe plantains may taste bitter or earthy, and they will also have a tough texture.
Can you directly fry or grill the gizzard?
Yes, you can. However, I recommend boiling the gizzards to infuse the seasoning to extract the water from the flesh and boiling them in the chicken stock for the sauce.
Why are the plantains falling off of the sticks?
This may be due to the size of the plantain slices, or they may have been over-fried. You can also slice them into moon-shaped pieces to prevent them from falling off.
