Ingredients

  • cooked chicken gizzards (as shown above)
  • sunflower oil (enough to deep fried)

For the fried plantain

  • 1 kg chicken gizzards (cooked, fried, or grilled and peppered) as shown above.
  • 1 fried plantain (as shown above)
  • ½ red bell pepper (medium-sized)
  • ½ yellow bell pepper (medium-sized)
  • ½ green bell pepper (medium-sized)

Instructions

  • Cook the chicken gizzard.
    Place the rinsed chicken gizzards in a pot. Add onion and garlic. Season it with mixed herbs, curry powder, garlic powder, ginger powder, turmeric, stock cubes, and all-purpose seasoning. Let it cook for 20 to 25 minutes or until tender.
    Set the stock aside and store the onions separately.
    You can choose to fry or grill the gizzard. To grill, arrange the gizzard on a lined baking tray and cook in the oven at 200° C for about 20 to 25 minutes or until grilled. To fry, lower the gizzards in hot oil and allow to fry until golden brown. set it aside.

  • Prep the pepper sauce.
    Pause sweet pepper, bell pepper, scotch bonnet, tomato, and onion in a blender until roughly chopped.
    Heat the oil from the fried ingredients in a pot, and cook the sauce. Add some stock and onion from the gizzard. Season it with curry powder, mixed herbs, and all-purpose seasoning.
    You can toss some of the fried or oven-grilled gizzards in the sauce. Leave to simmer for 2 minutes.

  • Prepare the plantain.
    Peel and slice the plantain to your preferred shape and size. Fry the slices using the oil from the gizzard. Once golden brown, remove it from heat.

  • Assemble the ingredients on the stick.
    Cut the bell peppers into small squares. Insert the chopped bell pepper, fried plantain, and chicken gizzard in any order you prefer. Then, place them on a plate and they’re ready to serve!
