When it comes to fried rice, I suggest using cooked rice or day-old rise. Since it’s already cooked, it only takes a while to cook with the chicken, vegetables, and coconut. The fluffy texture of the boiled rice will give the dish the best quality.
My go-to rice is asli basmati because of its long and loose grains. I suggest using day-old rice for the right level of moisture. Frying newly cooked rice can make the dish sticky.
