Ingredients

Pepper sauce

Beans

  • 3 cups honey beans
  • 1 tsp salt
  • 5 cups water

Yam

  • 1 yam (medium-sized)
  • ¾ cup water (boiled)
  • 1 sea salt

Instructions

Pepper sauce

  • Rinse, chop, and deseed the bell peppers and sweet peppers.
  • Set the seeds aside.
  • Use a knife to peel and slice the onion in half.
  • Set the other half of the onion aside.
  • Pulse the bell peppers and sweet peppers in a blender.
  • Pour the contents into a colander to drain.
  • Set the liquid aside.
  • Put the drained peppers back into the blender with the onion.
  • Blend until smooth.
  • Peel and slice the other half of the onion.
  • Heat palm oil in a pot over medium fire.
  • Then, fry the sliced onion in the oil.
  • Pour in the pepper sauce and cook for a minute.
  • Add the crushed chilies.
  • Stir the contents with a spatula.
  • Partially cover the pot and cook for 20 minutes on low heat.
  • Then, stir the sauce occasionally.
  • Season the sauce with salt and chicken stock cubes.
  • Cook on low heat for another 20 minutes.
  • Once the sauce darkens, add the pepper seeds.
  • Cook for another five minutes while stirring.
  • It's ready to serve!

Beans

  • Remove the shells and stones from the beans.
  • Rinse the beans until the water is clear.
  • Transfer the beans to a pot or pressure cooker.
  • Pour in hot water to cover the beans.
  • Cook the beans over medium heat for 20 minutes.
  • Season the beans with salt.
  • Then, add a bit of water.
  • Leave it to cook until soft.
  • Mash the beans with a masher.
  • Stir and mash the contents with a wooden spoon.
  • Once you are happy with the consistency, give it a taste!

Yam

  • Peel the yam with a knife.
  • Slice it into small diagonal slices.
  • Soak the yam slices in water to rinse.
  • Place a steamer in a pot or pressure cooker.
  • Pour in some water.
  • Then, steam the yams.
  • Season them with salt.
  • Steam cook over medium heat for 25 to 30 minutes or until cooked.
  • When they’re fork-tender, they are ready to eat!
