Instructions

Make the pepper sauce.

  • Slice and blend the bell peppers, sweet peppers, tomatoes, scotch bonnet, and onion until smooth.
  • Set this aside.

Prepare the egusi paste.

  • Blend onions, liquid stock from assorted meat, and egusi or melon seeds.
  • Set it aside for later use.

Cook the soup.

  • Heat palm oil in a pan over medium fire.
  • Then, gently pour in the pepper sauce, cover it, and let it cook for 15 minutes.
  • Afterward, add in the liquid stock and season it with stock cube, sea salt, and locus beans.
  • Let this cook for another 10 minutes.
  • Next, pour in the egusi paste. Incorporate the smoked turkey and let it cook for 5 minutes on low heat.
  • Then, add the assorted meat and simmer for 3 minutes.
  • For the finishing touches, add the diced onion and the smoked mackerel.
  • Let the dish simmer for another 3 minutes and enjoy the best-tasting Egusi Soup ever!

  • In case you don’t have melon seeds, you can try to use pumpkin seeds instead.
  • Store the stock from the assorted meat or cooked mackerel for future use.
