Prepare the ingredients

  • Peel the ripe plantain and cut it into cubes.
  • Deseed and dice the tomatoes and mixed bell peppers.
  • Peel and chop the onions.

Fry the plantain

  • Heat oil in a pot over medium heat.
  • Fry the plantation until golden brown. Do this in batches.
  • Set it aside.

Make the egg plantain batter

  • Break four eggs into a bowl.
  • Season it with a pinch of all-purpose seasoning and sea salt.
  • Whisk them together.
  • Add the chopped tomatoes and the fried plantain.
  • Mix them together.

Fry it

  • Place a pan on medium heat and add unmelted coconut oil.
  • Incorporate chopped scotch bonnet if preferred.
  • Toss in the diced mixed bell pepper and red onion.
  • Season with a pinch of all-purpose seasoning and sea salt.
  • Saute everything together.
  • Pour in the egg-plantain mixture.
  • Leave to fry for a few minutes.
  • Flip the egg to the other side.
  • Once the fried egg plantain is cooked through, remove it from the heat and enjoy your meal!
