Prepare the beans mixture.

  • Soak the beans in water for a few hours or overnight.
  • Peel the beans if preferred. But you can have it unpeeled as the skin is edible.
  • Add the beans, red bell pepper, sweet pepper, onion, scotch bonnet, water, and mackerel stock in the blender.
  • Blend on high speed until smooth.
  • Add a raw egg and season with your preferred spices - stock cubes, smoked paprika, mixed herbs, curry powder, and salt.
  • Mix again to infuse the flavors together.
  • Pour heated oil into the mixture and blend it again.

Cook the mackerel.

  • Place the sliced mackerel in a pot, season with salt and stock cube, and cook for about 7 minutes.
  • Debone the mackerel and break it into chunks.
  • Set it aside.

Cook the Moi Moi.

  • Pour the blended mixture halfway into the mug.
  • Put them in the microwave and cover them with a lid.

  • Cook for 7 minutes.
  • Check for doneness by inserting a cake tester or a toothpick in the middle. If it comes out clean, it is ready to serve!
