Prepare the yam.

  • Slice the yam in half. Peel off the skin and cut the yam into quarters.
  • Rinse them in a bowl of water and dry them with a paper towel.
  • Grate the yam using the finest holes of the grater.
  • The substance should be stretchy.
  • Season it with salt and all-purpose seasoning and mix it with your hands.
  • Cover it with a lid and set it aside.

Cook the mackerel.

  • Rinse and slice the mackerel into three or four pieces.
  • Place it in a pot with a bit of water.
  • Season it with salt, two stock cubes, and half a teaspoon of mixed herbs.
  • Cook it for 5 to 7 minutes on medium heat.
  • Set the liquid stock aside.
  • Debone and break the mackerel into chunks.

Make the sauce.

  • Slice the sweet pepper, bell pepper, scotch bonnet, and onion.
  • Blend them until smooth.
  • Heat palm oil in a pot and pour in the blended sauce and the liquid stock from the mackerel.
  • Cook this for 10 minutes.
  • Season it with salt and a stock cube.
  • Allow it to cook for another 5 minutes.

Cook the porridge.

  • Incorporate the grated water yam into the sauce in balls.
  • Cover it with a lid and allow to cook for 15 minutes on low heat.
  • Turn the yams over for even cooking.
  • Add in the mackerel chunks and cover to cook for five more minutes.
  • Stir the contents and transfer to a bowl to serve!
