Ingredients

Blended pepper sauce

  • 3 medium-sized bell pepper (rinsed and sliced)
  • 2 medium-sized scotch bonnets (rinsed and sliced)
  • 1 small-sized onion (peeled, rinsed and sliced)
  • ¼ cup water (optional: for easy blending)

Egusi (Melon) Paste

Instructions

Prepare the sauce

  • Heat palm oil in a pot over medium heat.
  • Cook the blended pepper sauce in the palm oil.
  • Season it with stock cubes, curry powder, mixed herbs, and locust beans. (optional)
  • Mix everything with a spatula.
  • Pour in the assorted meat liquid stock.
  • Cover and leave to cook for 10 minutes.
  • Toss in the cooked assorted meat.
  • Leave to cook for five more minutes.
  • Add the stock fish.
  • Taste and season with sea salt as needed.
  • Cook for another 5 minutes.

Make the Paste (Egusi paste)

Cook the soup

  • Add chunks/balls of the egusi (ground melon seeds) paste into the soup.
  • Reduce the heat and cook for 10 minutes.
  • Give it a stir.
  • Cook for five more minutes on low heat.
  • Add the kale, spinach, or other vegetables of your choice.
  • Cover and cook for three minutes.
  • Mix the leafy greens into the soup.
  • Add the smoked mackerel.
  • Cover and let it simmer for two minutes.
  • Serve the soup in a glass dish with your favorite side dishes and drinks!
